A Fantastic Meal For Any Day!

This is a great meal for any day of the week. That is, if you have time to prepare it.

Here's my menu for any day!

Fried Chicken

Fresh Cream Corn- Cut from the cob.

Fresh Green Beans- Fresh from Publix fresh produce department.

Pillsbury Grands Buttery Style Biscuits.

Man... I tell you the truth, this was one fine-tasting meal. I started preparing this meal Saturday night, and it kept me from having to be in the kitchen all day after I got home from church.

Have you ever had fresh cream-style corn cut from the cob? If you haven't, you should really try it.

Here's how you can fix some up for yourself. All you need is about 8 to 10 ears of fresh corn, a sharp knife and patience. Again I stress that you be careful and patient. It took me awhile to master this cutting technique.

First, shuck your corn (remove the husk and the silk from the corn) and rinse with cold water. Once you have this done it's time to start cutting the corn from the cob. You will need a large bowl to prepare your corn.

To cut the corn hold the ear of corn downward at about a 45 degree angle over a large bowl. Using a sharp knife, cut downward cutting off about 1/2 of the kernel until all is off the cob. Now use your knife to scrape the remaining part of the kernels into the same bowl. This is how you get juices out of the corn cob. Repeat the process until all of your corn cobs are clean.

You are almost ready to start cooking. But first you need to add 2-1/2 cups of water, 1 tablespoon of sugar, 2 teaspoons of salt, and 2 teaspoonsof black pepper and a large spoon to stir it up!

You can cook this in a deep skillet or a large cooking pot, which ever one you choose.

Cook over medium heat adding 3/4 stick of real butter or about 1/3 cup of cooking oil. Allow corn to cook for 45 to 50 minutes stirring occasionally to make sure that your dish is not sticking. There you have it! Let me know how it comes out.

Until next time,

Happy and healthy eating.
