Ballorieh - Pistachio Filled Lebanese Sweets
It is different than all other Lebanese and Arabic sweets. Even though its ingredients are almost the same as all other assorted Baklava pastries, it is different in taste, color, and look. Compared to other assorted Baklava pastries, this Lebanese dessert is the perfect example of how you can take a few ingredients and make very different deserts out of them by just baking them differently. The main factor that differentiates it from the rest of all Lebanese sweets is how it is baked. While most Lebanese sweets are baked for at least thirty to sixty minutes, this dessert is baked for only about five minutes. Thus, it effectively stays raw. You wouldn't notice unless you know, however. Many people know that it tastes very different than most other pastries but never thought about why that is the case, and are often surprised when they know that this sweet is baked for such short amount of time, which is the reason that gives it its unique taste. Its dough is baked just enough to make it a little hard. Usually five minutes is all what is needed. Baklava, Borma, Basma, Bukaj, and all other Lebanese pastries are baked for a long time which make their dough becomes golden brown and crunchy. This is not the case with Ballorieh, whose dough is white, just like raw dough. Its dough, however, is a little different that Baklava dough. Baklava dough is made from dough that looks like phyllo dough. Ballorieh however is made of Knafeh dough, which shares the same ingredients as phyllo dough, which are mostly flour and water, but that is made into long and think filaments or strings. One of its characteristics is that it is very rich in pistachios. This makes it a most desired piece among pistachio lovers. It also gives it it’s a bright green color which gives it a great appeal as it is put in contrast with its bright white crust made of raw dough.
