Cook’s Equipment Every Professional Needs

If you are opening a restaurant, you know you’re going to need a lot of equipment. While you probably know you’ll need big items like ranges and refrigeration units, what about all of the smaller items? Do you really need everything?

Probably not. It’s rare to find a restaurant that needs absolutely everything out there, but there are some essentials that you will probably need no matter what:

Knives and Cutting Boards

Good knives are essential for productivity and speed as well as safety. Many professional chef’s prefer to use their personal knives for most tasks, but it’s a good idea to invest in a few quality pieces to start with.

As far as cutting boards, you should have several, and they should be designated for their specific job. Meat should have it’s own, as should raw foods such as vegetables.

Pots and Pans

Good pots and pans will give you consistent results and last you a lifetime if taken care of properly, so don’t skimp when it comes to quality. First determine what you will be cooking, and then buy the right type of pots and pans for the job.

Sheet Pans

Professional sheet pans are a must if you are going to be roasting, baking, or anything else that requires an oven. They come in a variety of sizes and will bake evenly and last for awhile if you take care of them.

Spatulas, Tongs, and Spoons

Ask anyone who has ever worked in a professional kitchen, and they’ll tell you that you can’t have enough of these smaller items laying around when you need them. Luckily, they’re fairly inexpensive and easy to care for, but they tend to disappear a lot, so buy several and plan on replenishing your supply on a regular basis.

Measuring Cups and Spoons

Especially if you are going to do any baking at all, these are essential. If you want your recipes to be consistent, it’s also necessary to have measuring spoons for spices and herbs. Get a variety of liquid and dry cups to have handy for every job.

Food Processor and Blender

Essential for making perfect sauces and fast chopping, these are a definite must in most kitchens.

This is not a comprehensive list by any means, and you will probably need many more items, but this will get you started, as most of the items on this list can help you get almost any job done.
