Ingredients:
1/2 cup buttermilk
3 eggs
1/2 cup water
4 tablespoons unsalted butter, melted
1/4 cup brown sugar
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/4 cup brewed coffee
1 tablespoon ginger
1 tablespoon cinnamon
1 tablespoon nutmeg
1 teaspoon ground cloves
How to make homemade gingerbread pancakes:
In one bowl, stir together eggs, sugar, buttermilk, water and coffee. Take a separate bowl and combine flour, baking powder, baking soda, ginger, cinnamon, nutmeg and ground cloves. Stir egg mixture into flour mixture, mix together and add melted butter. Again, mix. Remember not to over mix the batter.
Take a frying pan or a griddle and grease it with oil. Pour ¼ cup of the batter onto the frying pan, cook on one side for about 2-3 minutes, then flip over and cook again for about two minutes.
