Gajar Halwa

Indians incorporate carrot in a variety of dishes like fried rice, salads, soups etc. ‘Gajar Halwa’, is a popular carrot desert of North India. Carrots are good for health and especially beneficial for people with poor eye-sight. Carrots can be incorporated in various ways for preparing recipes – chopped, grated, steamed etc. I am going to illustrate the preparatory steps of ‘Gajar Halwa’, a tasty as well as nutritious recipe for kids as well as elders.

To make 7 grand servings, you will need:
Carrots - 1 lb
Milk - 1 cup
Sugar - 1 cup
Ghee - 3 tsp
Cashew nuts for garnishing
Raisins(Onakka munthiri) - For garnishing

Preparation Method of Gajar Halwa:
1)For preparing gajar halwa, first peel the carrots and grate them finely.

2)Soak the grated carrots in the milk and pressure cook until done.

3)Heat sugar and ghee in a non stick pan. Stir for a few seconds.

4)Add the pressure cooked carrots and milk. Stir well.

5)Keep the lid closed in between stirrings, as there maybe some splashes, when the milk and ghee boil together.

6)When the milk condenses and the gajar halwa begins to thicken, remove from flame.

7)Gajar halwa, a tasty as well as nutritious dish for kids as well as elders, is ready. Garnish with cashews and raisins roasted in ghee.

Alternate method in the preparation of gajar halwa:
1)Chop carrots into small cubes and pressure cook in milk.

2)Grind this pressure cooked carrots(with milk) into a smooth paste.

3)Proceed like the first method from step 3 onwards.
