Gluten Free Breakfast Ideas
The easiest and most obvious of the gluten free breakfast ideas is eggs and meat. Pastured eggs and meat offer the best fats for helping growing brains. If you’re like me and hate cooking in the morning, you can hard boil and peel eggs in advance and have them ready to eat out of hand with a piece of fruit while waiting for the school bus. For a hot cooked meal, you can prepare an overnight baked omelette the night before. Mix together scrambled raw eggs with cheese and vegetables plus some rice or gluten free noodles to give it some body, then put into the fridge to set overnight. In the morning, just pop it into the oven before getting the kids up and you’ll have a hot, filling breakfast for everybody. Pieces of baked omelette are also good packed in wide mouth thermos bottles for eating later on in the morning if they prefer to eat after getting to school. Potato pancakes can be cooked in advance and reheated in a toaster oven for a quick breakfast. If you are able to find locally made injera, the Ethiopian sourdough teff crepes, you can use them to make hot breakfast burritos. Fill them with scrambled eggs, cheese, potatoes, salsa or anything else that your kids like. It doesn’t seem breakfasty to me, but my kids really like having broccoli, rice and beans in theirs along with the eggs and cheese. Who am I to argue about more vegetables and protein in breakfast? Having ice cream for breakfast seems odd, but if you’re making it yourself from unsweetened plain yogurt and fruit with just a bit of honey, maple syrup or stevia, it’s not junk food. You can even let them make sundaes with nuts, fresh or dried fruit, and crushed gluten free cereal to top the ice cream. The important thing to remember is that children need to start the day with a solid dose of good proteins and fats.
