Watermelon Sandwich Cookies These cookies are healthy and certainly geared for summer as these won’t dehydrate you, and best of all they won’t melt in everyone’s hands at the party. This healthy cookie recipe calls for blueberry whole wheat pancakes. To make a batch of six you’ll need: 12 three-inch wide whole wheat blueberry pancakes cooled to room temperature 6 seedless watermelon slices cut three inches round and 2/3 inch thick that are drained to remove excess moisture. natural whipped cream—enough to cover each pancake Spread some natural whipped cream on one side of the whole wheat blueberry pancake. Place a slice of watermelon between the two pancakes with the whipped cream facing the watermelon. Repeat till all six cookies are made. Chocolate Chip Oatmeal Cookies (from the Wholesome Junk Food Cookbook) Yield: 4 dozen Ingredients: 1 stick (1/2 cup) salted organic butter 1/2 cup expeller-pressed canola or sunflower oil 3 eggs 1 cup maple syrup 1 cup whole wheat flour 1 & 1/2 cups unbleached white flour 2 teaspoons baking soda 2 teaspoons unprocessed sea salt 3 cups organic rolled oats 1 cup coarsely chopped walnuts 3/4 cup chocolate chips, sweetened with grain or evaporated cane juice Healthy Cookie Recipe Steps: Step 1: Preheat the oven to 375°F. Step 2: Cream the butter in a mixing bowl until light. Add the oil, eggs, and maple syrup, beating well after each addition. Step 3: In a separate bowl sift the flours, baking soda, and salt. Step 4: Gradually add the flour mixture to the creamed mixture, mixing well. If the dough seems too stiff, add 1 to 2 tablespoons of water to soften the dough. Step 5: Stir in the rolled oats. Add the walnuts and chocolate chips. Step 6: Drop by tablespoonfuls onto an ungreased cookie sheet and bake for 8 to 10 minutes, or until just light golden. Vanilla Ice Cream (from the Wholesome Junk Food Cookbook) Yield: about ½ quart Ingredients: 1 (13 ½ ounce) can coconut milk ½ large or 1 small frozen banana 3 tablespoons honey or maple syrup 1 teaspoon vanilla extract ½ teaspoon salt Mix the coconut milk, banana, honey, vanilla, and salt in a blender until smooth. Pour into an ice cream maker and mix until the consistency of soft-serve ice cream. For ice cream sandwiches, place between two healthy chocolate chip oatmeal cookies. Tip: Cool down the cookies first by placing them in the fridge or freezer. Store these healthy treats in a cooler or fridge until they’re ready to eat.
