Homemade Cinnamon Peach And Cottage Cheese Pancakes Recipe
These homemade pancakes are great for a cold Saturday morning breakfast when you do not have to rush to work or to other duties and all you have to do is to eat a wonderful breakfast in front of your favorite TV show. Thanks to cottage cheese, your pancakes will have extra flavor and taste. To make them even better, I add fruits to the batter or just as a topping. Usually I use blueberries, bananas, raspberries, strawberries or apples. This recipe calls for peaches, because recently I made these pancakes with peaches and the result was awesome. However, you can add fruit, which you like the most. Of course, you can eat them without any fruits and still they will be very tasty.
Cinnamon, peach and cottage cheese pancakes are easy to make and it takes only about half an hour to prepare them. You will need some basic ingredients, which I listed below. I advise you to use fresh ingredients, specially when talking about flour, eggs, butter, cottage cheese, milk and baking powder. Homemade pancakes prepared from fresh ingredients taste much better and you always know that afterwards your stomach will not cause you any problems. Here is the recipe for delicious homemade cinnamon, peach and cottage cheese pancakes:
Ingredients:
- 1 cup all-purpose flour
- ½ cup milk
- 4 eggs
- 1 cup cottage cheese
- 2 tablespoons butter, melted
- 1 teaspoon baking powder
- 1 peach, shredded
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 pinch salt
- 2 tablespoons brown or white sugar
How to make cinnamon, peach and cottage cheese pancakes:
1. In one bowl, mix flour, sugar, baking powder, salt and cinnamon.
2. In a separate bowl, mix eggs, milk, cottage cheese, melted butter and vanilla extract. Add peaches.
3. Stir dry ingredients (flour mix) into wet ingredients (egg mix) and whisk until combined. Remember, do not use electric mixer to do this, and do not over mix 4. the batter, it can have some lumps remaining.
5. Heat a frying pan or a griddle over medium high heat and brush it with few drops of oil.
6. Pour about ¼ cup of the batter on the surface of frying pan or griddle and cook pancakes on one side for about 2-3 minutes or until golden brown. Flip 7.Serve warm and with desired topping.
