Spring Leg of Lamb

To make the brine, dissolve three tablespoons salt in six cups cold water. Add a teaspoon of black pepper, a clove of garlic, ½ teaspoon thyme and two sliced onions in the solution. Soak the meat and place inside the refrigerator.
Drain brine and place the meat on a roasting pan. Season the meat with ¼ salt, black pepper and paprika. Arrange the sliced onions and brush the meat with margarine or butter. Pour a cup of water into the roasting pan and place the pan inside the oven. Cook the dish for an hour at 325 degrees Fahrenheit.
Peach Glazed Leg of Lamb
In this recipe, you need two sets of ingredients. The first set will be used for the preparation of the meat, while the second set will be used for the glaze. For the dish, you need a pound of leg of lamb, a clove garlic and two tablespoons vegetable oil. The ingredients for the glaze are 16 ounces peach halves in syrup, ½ cup cooking sherry, ½ cup brown sugar, four tablespoons butter, two tablespoons cornstarch, ½ teaspoon allspice and a tablespoon grated lemon peel.
To prepare the meat, remove the excess fat and provide slits on the side of the meat. Put slivers and garlic in the slits. Brush the meat with vegetable oil. Put the meat on a roasting rack and cook in an oven that was preheated to 450 degrees Fahrenheit. Roast the meat for 15 minutes. While roasting, prepare the glaze. Pour the peach syrup in a small pan. Add the butter, sherry, brown sugar, allspice, lemon and cornstarch. Stir the glaze until it thickens. Heat the pan over medium fire. Remove the meat from the oven and spread the mixture on the meat. Return to the oven and cook until the temperature of the meat reaches 135 degrees Fahrenheit. After cooking, let the dish stand for 20 minutes before slicing and serving.
