Knife Sharpening.. The Right Way..
Now that your ready to get started make sure you have a lubricant oil. Lubricant oil reduces heat from the friction between the knife blade and the sharpening stone. Too much heat can warp your blade. lubricate the rough grit side of the stone by pouring and ample amount of oil on the stone. You don't need to get crazy with the oil but don't skimp out on it either. Your stone is now ready for sharpening. Place the knife blade flat on the stone and then raise it to a 10- 15 degree angle. It is very important to keep a constant angle with your blade, this will allow for the blade to be sharpened evenly from top to bottom. Start sharpening the first side of the blade by imagining you are carving off a slim piece of the stones surface. you can use one of two techniques when using your knife sharpening tool, stroking into the blade or stroking away from the blade. Both work, its just about whats comfortable for you.If the blade is curved or longer than the stone you will want to sweep the blade sideways as you work so that the entire edge is sharpened evenly. Apply moderate pressure, and after you perform one stroke, start start over and repeat about 6-12 times. Now that you have accomplished one go-around, flip the knife sharpener over to the fine grit side and repeat the above steps.
