Learn How To Cook Cheaply And Healthily

So you're single again. And not only do you have to pay alimony, but you're also underemployed. In fact, you suspect that the ex-wife you're paying alimony to is making more than you! If you do pay child support, we hope you consider that a proud responsibility, an act of love, even a blessing. But the long and short of it is that you're broke. You are so broke in fact, that you can't eat out anymore and find yourself counting every item you put into your grocery basket. And if you're really broke, you will find yourself putting items in and taking them out again. So consider you're priorities when it comes to cheap, healthful, and tasty cuisine.

First, you need protein. And contrary to your urges (unless you're already a vegetarian), you don't have to eat meat every night to get it- or even most nights for that matter. Legumes are your best bet here; we prefer them mashed and spread thick on tortillas, with all the cheap trimmings of course. Or we whisk them up in thick soups with big chunks of carrots, potatoes, onions, and celery. Beans can't be beat for protein in fiber. Then next favorite is cheese and dairy products, which are almost as versatile as beans. Finally there are all the soy products. We like them; maybe you will too.

Next, you need vitamins and minerals, and this is where veggies and fruits come in. Now, fresh vegetables may be the first thing that comes to mind, but we say consume them sparingly. Mostly go for the dark, leafy stuff; everything else will just bust your budget. Which brings us to canned and frozen vegetables. Surprisingly, canned veggies are not just cheap- they are nutritionally rich, and often beat out their fresh counterparts. Frozen vegetables come in second, are tasty, and provide good bargains. About grains and starches- use sparingly. Potatoes and corn are mainly starvation fare anyway.

In any case, except for calories, you don't get much bang for your buck with grains, even the whole-grain varieties. Having said that, they are bound to make an appearance of some sort at most meals. There's not much more to say. Buy in season and buy bargains. And be sure to budget- you don't want to starve at the end of the month do you? With a bit of conservatism, you can eat healthy and cheaply.
