Let's Talk Appetizers

In my home appetizers serve a variety of purposes for a variety of occasions! Appetizers are a great way to enjoy something light in that time span between breakfast and dinner and can eve be great for a light evening snack!

Whether it is an afternoon brunch with the girls, the fellas watching football or me and my Mr. Wonderful watching a movie - I have managed to become known for my delicious as well as attractive appetizers!

Here are just a few of my dips that take less than 10 minutes to prepare and are healthy as well! Of course you will find ways to add your personal touch based on your food preferences and make it a creation of your very own.

My favorite by far is my Guacamole Dip and truthfully speaking, some people cannot tolerate the jalapeno peppers. I am currently enduring the symptoms of menopause, hot or spicy foods have become intolerable. However, I am still able to enjoy the Guacamole Dip without the peppers and here are the ingredients that you will need:

3 or 4 ripe avocados
1Tablespoon of sour cream
1 pkg. of Dry Hidden Valley Ranch Dressing
4 oz jalapeno peppers (optional)
4 oz chopped green chillies (optional)
4 oz Mozzarella Cheese (shredded)
3/4 c onions (diced)
2 tomatoes (diced)
1 can black olives
Tortilla Chips

First you will want to thoroughly mash your avocadoes, using a mixer is always best. Add the sour cream, the dry ranch dressing, chilies and peppers, layer mixture in a glass bowl with the remaining ingredients.

Next for my Philly Cheese Lovers, I call this one my Cheesy Philly Chili Dip and it consists of:

1 ( 8 oz package of Philadelphia Cream Cheese (softened)
1 (15 oz) can of chili
1/2 cup Kraft Cheddar Cheese (shredded)
2 Tablespoons of chopped cilantro

First you will want to spread the cream cheese onto the bottom of a microwaveable pie plate;
Top cream cheese with chili and cheddar cheese;
Microwave on HIGH for 45 to 60 seconds or until the cheddar cheese appears melted;
Sprinkle with cilantro;
Serve with your favorite crackers!

Now if you want to spice things up a bit more, then you ABSOLUTELY try my SALSA! All items in this salsa are made from FRESH Produce - and here is what you will need:

8 ripened tomatoes
1 red onion
2 cloves of garlic
1 cup chopped cilantro
1 Tablespoon of salt
1 jalapeno pepper
1 green chillie pepper

Chop or process the tomatoes, garlic, red onion, and the cilantro; Mix well;
Add salt and the items that you have chopped or processed into a one quart size jar;
Refrigerate for at least 1 hour then serve with tortilla chips.....ENJOY!
