Low Carb Seaweed Soup

For ingredients, you shall prepare for 115g dried wakame (soaked for at least half an hour), 1.5 litres fish or beef stock, 1 bunch spring onions (white and some green parts chopped), 1 tbsp of sesame oil, 1 clove garlic (crushed and finely chopped), 175g lean tender beef (cut into fine strips soy sauce), toasted sesame seeds for garnish.

For the making of the soup, drain the wakeme and cut into strips. Pour the stock into a saucepan, add the spring onions and bring to boil. Lower the heat so the stock simmers gently. Heat the oil in a frying pan, add the garlic and beef and stir-fry for about 2 minutes. Add to the stock together with the wakame. Add soy sauce to taste and heat through. Serve garnished with toasted sesame seeds.
