My Secrets For Preparing Salmon
Most of my favorite recipes for salmon involve the barbeque. If you cook your salmon outside, you avoid getting a fishy odour in your house. One really easy and delicious recipe involves raspberry jam and soy sauce. It sounds odd, but it makes a sweet glaze for the salmon that is really very good. For two people, start with two servings of salmon with the skin on. Marinate these for about 20 minutes in a mixture of 2 tablespoons of raspberry jam, and 2 tablespoons of soy sauce. Put them on a well greased barbeque grill over medium heat for about 5 minutes. Flip them over so that they are skin side down and cook for another 5 minutes, or until they are flaky. When they come off the grill, simply slip off the skin, and serve. This recipe may be modified to cook in the oven, if you prefer to cook baked salmon, or have no barbeque. If you have picked up some smoked salmon, and want to incorporate it into a cooked dish, you might want to try making some pasta with a creamy sauce. It is easy to find such recipes on the internet, and my favourites include such ingredients as fresh green peas and dill for a fresh springtime flavour any time of year. You can also use smoked salmon to make a delicious quiche, and might include some asparagus and tarragon. Served with a salad made of mixed baby greens, this makes a very elegant lunch or light supper. Dieticians recommend including fish in your diet at least two days a week. Salmon is so delicious and easy to cook that it is a natural choice for at least one of these days.
