Peach Cobbler Recipe With Fresh Peaches


It's not too early to start thinking about fresh peaches. Actually, some of the California peaches are in the supermarkets already; however, their quality is somewhat uneven, what with being picked early and shipped for hundreds or thousands of miles. Still, even now it is possible to find ripe peaches with good flavor. In a manner of weeks, however, local peaches all over the country will begin ripening and crowding the shelves of departments and farmers markets everywhere.
Many chefs experiment with various kinds of peach cobbler, and this recipe is the end result of that work. Everyone seems to enjoy this recipe, and its taste is divine. Therefore, we believe that it is important to enjoy peaches during in every way possible during the summer. The peach cobbler is one of the best ways to do so, and has been far a very long time.
To make a great peach cobbler, you will need the following ingredients: eight fresh peaches carefully peeled, pitted and sliced into thin wedges; one-quarter cup brown sugar; one-quarter cup white sugar; one-half teaspoon table salt; one-eighth teaspoon ground nutmeg; one-quarter teaspoon ground cinnamon; one teaspoon fresh lemon juice; two teaspoons cornstarch; one cup all-purpose flour; one teaspoon baking powder; six tablespoons chilled, unsalted butter cut into small cubes; and one-quarter cup of boiling water. Next, mix one teaspoon of ground cinnamon with three tablespoons of white sugar.
For fresh peach cobbler, preheat your oven to 425 degrees F (220 degrees C). Then, in a big bowl, combine the peaches, 1/4 cup of white sugar, 1/4 cup of brown sugar, 1/4 teaspoon of cinnamon, lemon juice, cornstarch, and lemon juice.
Coat evenly by tossing, then pour it into an oven-safe 2 quart dish. After the oven is preheated, bake for ten minutes. While it bakes, mix flour, 1/4 cup each of brown sugar and white sugar, baking powder and salt. Use your finger tips or a pastry blender to mix in the butter until it has the consistency of coarse meal.
Stir in water until just combined. Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes. Your wonderful Peach Cobbler is now ready.
