Add the melted butter, beaten eggs and buttermilk. Mix all these ingredients until they are smooth. You can add more buttermilk if you think that the mixture is too thick. Leave the mixture for an hour. Heat the pan with melted butter and spoon the mixture into it. Low glycemic index recipes are not boring to work on and this pancake can be a great addition to your breakfast. There are lots of other great recipes like grilled tofu with cold spicy noodles or Japanese vegetable salads.
