Over one hundred years ago a young man, Carl Elsener, abandoned a generations old family tradition of haberdashery and set his sights on becoming a great knife maker. He succeeded far beyond his dreams by creating and selling the very first Swiss Army Knife.

Mr. Elsener invented and sold the first and the original Swiss Army Knife. These gained tremendously in popularity and in 1937 the Forschner Butcher Scale Company began importing and selling them. The two companies' association has continued since this time.


Today the Victorinox Company exports 90% of their entire kitchen cutleryover 73 million knives each year. Due to many criteria and specifications that will have to be met, only a flexible and strong alloy can be used.

Blades that have a wavy appearance are designed for use with things that are easily crushable but have a thicker exterior such as tomatoes and breads. The blades that are perfectly straight are best used for uncooked meats and chopping veggies. The long, narrow boning blades are useful when you are working with meats that have bone or cartilage like chops and rib meats. You will need to use one of the boning blades that is wider when you are working with meats like poultry. There is even a curved blade for boning and that is to provide you the maneuverability and flexibility necessary when working close to the bone in any meats.

The Forschner Company even provides their own brand of sharpener steels for you to use with their products or any others that you may have. Each is designed to hone your blades to razor edge fineness. Their steels are constructed so that will be able to sharpen quickly and can even be used to align the edges of those blades which are no longer true.
