Recipes For Fall

I am always going through my recipe box and most of the time it is just to reminisce about a past event or dinner. This time I was looking at recipes for a dinner menu for some of my friends. I decided that it would be nice to come up with a fall theme dinner for everyone.

There were so many ways to go with this type of dinner and I was having a hard time deciding on the right recipes. Then I remembered one of my future dinner guest had mentioned that his grandmother had a wonderful Noodle Bake Recipe. He told me that no one knew what the recipe was because it was one she never actually put to paper. I always think it is so sad when we lose a family recipe, that I decided I needed to ensure my recipes got passed on to my friends and family but after looking at some of my recipe cards, I realized no one would be able to read some of my notations(my own form of shorthand), so I am going to start putting some of these in typed form for everyone to enjoy.

So with all this in mind, I started looking for a Noodle Bake recipe to surprise my friend and may be help him distinguish what his grandmother had in her recipe. Food is a powerful brain stimulator and sometimes helps trigger memories of our past. I am hopeful that this will trigger something for him.

Sour Cream Noodle Bake

1 8 oz package of noodles 1 cup of sour cream
6 large green onions 1 cup sharp Cheddar cheese
1 can Tomato soup 2 tbs. Butter
1 tsp salt 1/2 tsp pepper
1/4 tsp garlic powder 1 lb ground beef

Cook noodles and drain. Place noodles in large bowl and add 3/4 cup of cheese, sour cream and onions and mix with noodles.
Brown ground beef with salt, pepper and garlic powder. Once beef has browned, drain and add the tomato soup to meat.
Take a large baking dish and prep it with cooking spray. Now you are ready to put the casserole together. Start with a layer of noodle mixture and then alternate layers of noodle mixture and meat mixture. Top with remainder of cheese.

Bake at 350 degrees for 25 minutes.

Best served with a green salad or any salad of your choice.

Of course, no meal is complete at Ms. Honey's without something sweet.
