Shopping for a griddle pan doesn't have to be hard, but you do need to make sure you get a good quality pan that will perform well and last a long time. One type that I highly recommend is cast iron.
Many pans these days have a nonstick coating. Teflon is a common coating. There are several problems with these coatings. First of all, they are likely toxic. If you have ever owned one of these, you probably notice that the coating starts to scratch off and wear away. Where do you think the coating goes? It's likely that it ends up in your food and then in you.
If the coating starts to scratch off, it causes another problem. Without the coating, it can't be as nonstick, right? That means it won't last as long. On top of that, the pan itself might not perform as well over time. If you are looking for a specific type of pan, you can use that, but for an ordinary pan I would stick with cast iron.
With cast iron, you can season it and it will be just as good as a nonstick coated, but without the toxicity. You can season it in your oven as many times as needed, and if it loses it, just clean it and re-season it. It's also a very versatile pan.
Whatever you choose, makes sure it is one that works well. If you hate it and can't stand how it works, get a better one. There is no reason to cook with a bad pan.
