Stuffed Cucumber Slices
Ingredients:
1 Long English cucumber; 1cup/250ml Olive oil; 1/3 cup/80ml Lemon Juice; 2tsp/10ml Salt; 1/2 tsp/3ml White Pepper; 1 cup/250ml Minced Smoked Salmon; 1/4 cup/250ml Mayonnaise; 2tsp/10ml Dijon Mustard; Watercress Leaves.
Pare the cucumber and cut it in 1/3" lengths. Using an apple corer remove the centre pulp and seeds. Place into a large mixing bowl.
Blend the oil, lemon juice, salt and pepper together, pour over the cucumbers cover and refrigerate for 2 hours, drain.
Blend the salmon, mayonnaise and mustard together. Stuff this mixture into the the cucumbers. Slice the cucumbers into bite size pieces, place on a serving platter, garnish with the watercress and serve.
Wash the mushrooms and remove the stems. Boil the caps in lightly salted water, drain and cool. Mince the stems.
Heat the butter in a large skillet. Saute the crab meat and mushroom stems. Sprinkle with flour and cook for 2 minutes. Add the remaining ingredients except the bearnaise sauce. Simmer until very thick.
Preheat the ovens broiler.
Stuff the caps with the crab mixture, place caps with the crab mixture, place caps o a cookie sheet. Top each cap with a dollop of bearnaise sauce. Place under the broiler of your oven and brown. Serve very hot.
