* Preheat your oven to 400 degrees, a convection back mode can make it crispier

* Mix all dry ingredients well in a bowl- flour, salt, xanthan gum, buttermilk powder, sugar and yeast.

* Pour wet ingredients- olive oil, water, vinegar. Stir for approximately four minutes or until well-blended. You should have a nice consistency of dough in your bowl.

* Take the dough from the bowl and place it on a tapioca-floured surface. Add more tapioca flour to the dough and begin working it together to form a large dough ball.

* Cut the ball in half and you will be able to produce two medium-sized, pizza crust pies.

* Roll out each half of the dough separately and shape into flat, circular shapes on a pizza stone or a cookie sheet lined with parchment paper. You should sprinkle corn meal on the parchment paper to avoid sticking. You can make your dough as thick or thin as you like.

* Put each pizza crust into the oven for about five minutes to firm up the crusts.

* Top with your favorite ingredients and return to the oven for about 7 to 10 more minutes. It is ready when the cheese is bubbling and starting to turn a golden brown.

* Enjoy.
