The Importance Of A Sharp Knife

When Michael was a young boy he and his dad would go down to the San Diego Harbor to pick grandpa up from work. Grandpa worked at the Fish Market owned by the Ghio Family. The Ghio's owned the Anthony's Fish Grotto Restaurants. They had several restaurants in the San Diego area. Michael's dad was a Chef at the restaurant and his grandpa worked at the Fish Market processing fish and seafood for the restaurants. Michael watched as grandpa de-scaled and cut up the fish. "What's this one grandpa", he asked. So grandpa gave Michael a quick rundown of the fish in his area. "This is Halibut, this is Sole, this is Rock Cod, this is Salmon, and he went on until he had named all the fish in his area. Grandpa then lifted a large piece of fish onto the cutting table. "What's that grandpa?" "This is part of a Sword Fish," he replied. Michael watched as grandpa carefully chose which knife he was going to use. Grandpa pulled the long knife out of the block and began to sharpen it with a stone and then a strap. He cut that Sword Fish into fillets as if it was no problem at all. Every now and then he would pull the knife across the stone and then finish with the strap. "Why do you keep sharpening the knife grandpa?" "So it cuts easier and safer, a sharp knife cuts without much resistance which makes it less likely I will cut off a finger," was his response.


After work they stood by the waterfront at the harbor and grandpa pointed out some Tuna Fishing Boats. Grandpa remembered when he was a young man and he used to fish for Tuna. He shared with me that this is where he learned the value of having a sharp knife. Grandpa reminisced, "We were fishing off the coast of South America and the crew was letting the nets out. I was on deck helping guide the nets off the boat when suddenly something caught my boot and I was headed overboard and into the water. Not much time to think but I did manage to get a big gulp of air before I went under. My boot was tangled up good and could not pull it loose from the net. Reached straight for my knife and had to cut my boot free of the net. When I surfaced they sent a small boat out to get me. If that knife had been dull I would not be here today telling you this story."
