Tom Yum Gai Soup
Following ingredients will be required to make 4 servings of the soup: 2 tablespoons of groundnut oil 2 cups of chicken stock 2 stalks of fresh lemongrass, chopped 3 slices of fresh (2 slices if taken dried) galangal 2 tablespoons of tamarind juice 2 tablespoons of fish sauce 3-4 fresh or frozen kaffir lime leaves 15 to 20 Thai chillies 1 medium onion, halved 2 green onions, sliced (optional) 6 slices of fresh ginger 2-3 tablespoons of roasted chilli sauce or chilli garlic sauce 1 boneless skinless chicken breast half, made into thin slices (half pound or 8 ounces) 2 garlic flakes, chopped 4 to 5 ripe tomatoes, cut into quarters (optional) 2 tablespoons of lime juice 10 small crimini or straw mushrooms, cut into quarters 5 button mushrooms, cut into quarters 2 cups water Coriander (Cilantro) (to taste) First take the chicken, onion (not the green ones) and half the quantities of lemongrass and ginger and stir-fry all these into the oil over a medium fire. You will have to sauté all these until the onion becomes transparent and chicken becomes slightly pink. Adding to this, the chicken stock and water, bring the mixture to a boil and then add some more ingredients like the remaining ginger and lemongrass, fish sauce, tamarind juice, kaffir lime leaves and galangal. Again boil the mixture for 3 minutes. Now you have to add garlic flakes, chilli sauce and mushrooms. Lower the flame to simmer and cook for 7 minutes more. Tomatoes and chillies can be added now. Reduce the fire to very low after some time and add the green onions and lime juice. Simmer for some more time. If you wish, you can add more of fish sauce too. Now you can remove the mixture from the fire. Garnish with cilantro and serve hot. If you put the chillies chopped, the soup will become spicy; if you keep them whole, the soup will become mild. Remember that dry chillies are spicier, so if used, reduce their quantity to 1/3rd that of the fresh ones. As per your liking, you can add tofu too with chicken.
