Vegan Cookie Ingredient Substitutes

Common ingredients found in cookies include milk, eggs, and butter to name a few. So, how do you turn a regular cookie recipe into a vegan-friendly cookie recipe? The answer is through substitutes. A vegan can make an otherwise conventional cookie into a vegan cookie this way. Here’s some tasty replacements for non-vegan ingredients:

Milk Replacements
Soymilk will prevent dryness in your vegan cookies much like regular milk does in conventional cookies.
Almond milk makes for a close second place option. One cup of soy or almond milk will equal one cup of dairy milk.
Rice Milk is a non-fat alternative, however, your vegan cookies may result in too much dryness.

Egg Replacements
Cookie recipes vary, so when finding an egg substitute for use in a vegan cookie recipe keep in mind whether the egg(s) in the recipe are more for binding or for leavening. What does this mean?
In binding, eggs provide moisture to keep all the ingredients together.

Binder substitutes include:
--Flaxseeds. Mix one tablespoon of ground flax seeds with three tablespoons water (or other liquid) and stir until thick and gelatinous. This equals one egg.
--Commercial egg replacers (an all purpose egg substitute), can usually do the trick. However, be aware they may leave a bitter aftertaste in your vegan cookies.

If the type of vegan cookie you are trying to make needs more fluff, then a leavening agent may be needed in order for the cookie to rise and reach the desired volume.

Leavening substitutes include:
--Soymilk with lemon. Usually ¼ cup soymilk plus one tablespoon lemon will equate to one egg.
--Dairy free Tofutti sour supreme and baking soda. Mix ¼ cup Tofutti sour supreme with ¼ teaspoon baking soda for each egg.

Butter Replacements
Any vegan butter substitute will do just fine. An example would be Earth Balance Buttery Spread. Many vegan butter substitutes tend to be less solid than dairy butter; this is easily fixed by freezing it beforehand to avoid problems in a recipe. Salt-free vegan butter is another alternative and reduces the salt in your vegan cookie recipe significantly if you need to watch your salt intake.

Experiment. You may find that you like the results of using one brand over another when it comes to replacing ingredients in your vegan cookie recipes. For healthy vegan cookies, experiment with using ingredients like date paste and coconut to replace white sugar.
