What Is Dark Roast Coffee?

Coffee beans are not naturally black; they actually can be found in nature in either red or green colors. Roasting is a chemical process that changes both the chemical and physical properties of green coffee beans so that they increase in size and change in color, taste and smell. The roasting process involves heat, which causes several chemical reactions in the coffee. Companies such as Green Mountain Coffee Roasters and Boca Java use roasting to achieve different levels of roasting.

Dark Roast Coffee

Dark roast coffee has a darker color than other types of roast. It can be classified as (from lighter to darker) High, Viennese, Italian Espresso, Continental, French and Spanish. Darker roasts have the characteristic of blending the original taste of the beans with some other flavors that are a result of the roasting process itself. Unlike lighter roasts, the dark roast coffee beans are shiny and oily. This is caused by the "second crack," which results from heating the beans longer than during a medium roast.

Be Aware

The darker the roast, the harder it will be to recognize the natural flavor of the beans. If you buy expensive unroasted coffee beans, it might not be a good idea to apply a dark roast to them. However, a dark roast is useful for highly acidic coffee beans, because it will add a smoky, sweet aftertaste to your blend.
