There are several things you can do to keep your pancakes from being fluffy, and you should avoid them. Most of them have to do with the batter. First, be careful when mixing the dry ingredients. Make sure you don’t forget the baking soda or baking powder that will make it rise. Also, don't forget to sift the flour. This will help the pancakes to be much fluffier.
Next, you are going to mix the wet and dry ingredients together. This is another important step that you can easily mess up. Don't beat the batter. This is the easiest way to avoid fluffy pancakes and even make them tough. I doubt you will ever want tough pancakes.
