Thai Sticky Rice With Mango

Thai desserts are as flavourful and colourful as the main meal itself. Thai desserts are based around simple ingredients of coconut cream, sugar, flour and sometimes eggs. Thai sticky rice with Mango is a delicious Thai dessert that's a great ending to any Thai meal. It's also a quick and easy dessert to make.

To prepare it you will first need the following ingredients. Most of them are easy to find but for the sticky rice you may have to go to a shop that sells Thai or Asian ingredients. You will need 1 cup of sticky rice, one or two Mangos (depending on how many you are cooking for) which you cut into 50 pence sized chunks, 5 table spoons of brown sugar, a quarter tables spoon of salt and 1 carton of coconut milk.

To make the dessert first soak the rice in a cup of cold water for thirty minutes. Then add three quarters of a cup of water, one quarter of a carton of coconut milk, the salt and one tablespoon of brown sugar. Stir all of this in together in a saucepan.

Bring this to the boil then simmer for twenty minutes. Turn off the heat but leave on the hob so that the heat is still going through the pan. For the desserts sauce take the remaining coconut milk and add the remaining brown sugar. Heat gently in a saucepan but don't allow it to boil.

Take a portion of rice and add some mango chunks. Then pour over the sauce and enjoy.
